This November, Caruso, A Belmond Hotel, Amalfi Coast brings its new gastronomic philosophy, Antiqua Cucina Nova, to Singapore for an exclusive three-day culinary residency at L’Amo Bistrò del Mare at METT Singapore.
Taking place from 13 to 15 November 2026, the residency will see Executive Chef Armando Aristarco of Caruso join Chef Daniele Sperindio, Director of Culinary & F&B at METT Singapore and the culinary force behind ART di Daniele Sperindio, for a celebration of Italian coastal cuisine, craftsmanship and conviviality.
Rooted in simplicity, respect and authenticity, Antiqua Cucina Nova honours the culinary traditions of Naples and the Mediterranean while allowing them to evolve through refined technique and seasonal ingredients. At L’Amo, this philosophy will meet Chef Daniele’s own contemporary interpretation of Italian gastronomy, creating a dialogue between two Italian culinary stories connected by the sea.
Within the elegant setting of L’Amo Bistrò del Mare at METT Singapore, the collaboration brings together two chefs, two destinations and a shared vision of Italian hospitality. Across the residency, guests can look forward to menus that celebrate the richness of Italy’s coastal flavours, from exceptional seafood and seasonal produce to dishes inspired by Campania, the Amalfi Coast and the wider Italian coastline.
The residency will be anchored by a Six-Course Four Hands Dining Experience, priced at S$188++ per person and available for lunch and dinner. The menu unfolds as a journey along Italy’s coastline, beginning with an aperitivo and Chef Daniele’s Crudo di Santa Margherita, before moving south to Campania and the Amalfi Coast through Chef Armando’s expressions of cannellini beans, mussels, Neapolitan sourdough and seafood stew. The experience continues with L’Amo’s autumnal Vitello Tartufato and concludes with Caruso’s Il Limone, a tribute to the prized Sfusato Amalfitano lemon.
