The Henderson has unveiled Peridot, a sky-high destination in Hong Kong dedicated to terroir-inspired cocktails and pioneering plant-based cuisine.
Located on the 38th floor of Summit 38, the new venue combines innovative mixology and fermentation-led dining with soulful live music and panoramic city view, all set within a striking interior designed by Studio Paolo Ferrari.
Peridot’s cocktail programme, curated by beverage director François Cavelier, explores the unique “terroir” (which refers to environmental factors like soil and climate) that influence spirits. Each quarter, the menu highlights a different region, beginning with Kagoshima, Japan, known for its sweet potatoes and craft shochu production near the Sakurajima Volcano.
Signature cocktails include The 3 a.m. Whisky, Nude Study, and Durian’s Consent, each celebrating local ingredients and artisanal traditions. Beyond its cocktail innovation, Peridot boasts an exceptional collection of rare spirits, from vintage single malts to small-batch agave distillations.
Complementing the drinks is Argentinian chef Lisandro Illa’s fermentation-forward plant-based haute cuisine. With experience from Copenhagen’s Noma and Popl, Illa presents dishes crafted through complex fermentation techniques.
His menu includes inventive bar snacks and refined 3- or 4-course lunch tastings, such as Koji Carrot Pumpkin Ginger Soup and Asado Mushroom with Chimichurri Forest. These dishes show that plant-based dining can be indulgent, exciting, and crave-worthy.
Peridot features live music from Thursday to Saturday, with performances by a pianist, saxophonist Veronika Semylit, and guest DJs.
The interior, designed around the theme of ‘Natural Futurism’, combines a lime-green palette, marble surfaces, and over 20,000 handcrafted lights to create an atmosphere that transitions seamlessly from day to night. At its centre stands a light green grand piano — a focal point for both design and performance.
Whether for a leisurely lunch, an experimental cocktail or a late-night performance, Peridot invites guests to explore what they have to offer on Monday to Saturday.
