Bangkok’s dining scene just got bolder. Duet by David Toutain at The Ritz-Carlton has unveiled two new tasting menus – Signature and Discovery – designed to put ingredients front and centre.
Created by Chef David Toutain and Executive Chef Valentin Fouache, both menus focus on seasonal produce, French technique, and precision, with provenance cards at the table showing the journey from farm or sea to plate.
The Signature Menu (THB 5,800++) is Duet’s most complete experience. Highlights include Alaskan King Crab with Shadi Schrenki caviar, Brittany Blue Lobster with spruce and homardine sabayon, and ember-grilled Normandy Scallop with cauliflower and X.O. sauce.
For a lighter option, the Discovery Menu (THB 4,500++) offers a shorter, more flexible tasting. The menu evolves with the season and market, and select courses can be personalised, making each visit feel fresh.
To mark the launch, Chef Toutain will be in Bangkok from March 23 – 25. Guests can enjoy the Signature Menu in his presence at THB 6,500++ per person, including a glass of Champagne Billecart-Salmon. Optional wine or zero-proof pairings are available.

The excitement continues on March 26 – 27 with a six-hands dinner uniting David Toutain’s three restaurants for the first time: Restaurant David Toutain in Paris (two Michelin stars), Feuille in Hong Kong (one Michelin star, Green Star, and Asia’s 50 Best ranking), and Duet in Bangkok.
Chefs Toutain, Joris Rousseau, and Valentin Fouache will craft an eight-course menu, blending one philosophy across three cities. Tickets are THB 6,500++ per person.
