Two established names in contemporary Chinese cuisine will come together in Bangkok this July for a one-night four-hands gala dinner. Chef Ho Chee Boon and Chef Alvin Leung will present an eight-course Cantonese menu at Silver Waves by Boon, Chatrium Hotel Riverside Bangkok, on July 18, 2026.
The collaboration brings together two different approaches to Chinese cuisine. Chef Ho Chee Boon is known for his modern interpretation of Cantonese cooking, with a focus on balance and traditional techniques. Chef Alvin Leung, recognised as the “Demon Chef”, is known for his creative approach to Chinese gastronomy and unconventional flavour combinations.
The eight-course menu combines Cantonese classics with contemporary elements. Dishes include a modern take on Buddha Jumps Over the Wall featuring abalone, sea cucumber, black truffle and foie gras, wok-fried Thai river prawn with green almond and milk curry sauce, caramelised black char siu, and roasted Chilean sea bass with passionfruit and Champagne sauce.
The dinner reflects the chefs’ different culinary perspectives while highlighting their shared focus on technique, ingredients and Cantonese heritage. Each course will be paired with selected wines as part of the evening’s menu.
Chef Ho has led Michelin-starred kitchens across Asia and internationally, while Chef Alvin Leung has gained recognition for his modern approach to Chinese cuisine. Their collaboration brings together two chefs with distinct styles for a single dining event.
The gala dinner will begin at 6:30 pm at Silver Waves by Boon, located on the 36th floor of Chatrium Hotel Riverside Bangkok. The eight-course menu is priced at THB4,888 per person, with an optional wine pairing available at THB1,488 per person.
